Mix all the seasoning for the salad together in a small bowl. Reserve.
Add all the chopped vegetables: tomatoes, cucumber and onion to a bowl, add the salad seasoning and mix it well. Reserve.
Season the chicken with salt and black pepper to taste. In a medium-high heat pan, add the oil. Once the oil is hot, add the chicken and stir fry for about 5 minutes.
Assembling the bowl
Start by adding the hummus at the bottom. Add the 3 tablespoons of hummus in each bowl.
On top, add half of the seasoned salad in each bowl. Add the chicken. Garnish with parsley. Enjoy a delicious and healthy meal.
