Chicken Hummus Bowl Ingredients
- 6 Tablespoons Hummus – See how to make hummus with this recipe.
- ½ cup Cherry Tomatoes, halved (100g)
- ¾ cup Cucumber, chopped (100g)
- 1 Red onion, sliced
- ½ pound Chicken thigs, chopped (250g)
- ½ Tablespoon oil
To season the salad
- The juice of half a lemon
- 1 Tablespoon Extra-virgin olive oil
- 1 Tablespoon Water
- 1 teaspoon Oregano
- ½ teaspoon Honey
- Salt, paprika and black pepper to taste
How to Make the Best Chicken Hummus Bowl
- Mix all the seasoning for the salad together in a small bowl. Reserve.
- Add all the chopped vegetables: tomatoes, cucumber and onion to a bowl, add the salad seasoning and mix it well. Reserve.
- Season the chicken with salt and black pepper to taste. In a medium-high heat pan, add the oil. Once the oil is hot, add the chicken and stir fry for about 5 minutes.
Assembling the bowl
- Start by adding the hummus at the bottom. Add the 3 tablespoons of hummus in each bowl.
- On top, add half of the seasoned salad in each bowl.
- Add the chicken.
- Garnish with parsley.
