- 2 Chicken breasts (halved) (Around 450g)
- 1 Tablespoon Oil
- 1 teaspoon Salt
- ½ teaspoon Black pepper
- ½ teaspoon Garlic powder
- 2 Garlic cloves, minced
- ⅓ cup Sun-dried tomatoes, chopped
- 2 cups Baby spinach (fresh)
- 250 ml Low-fat cooking cream (you can also use heavy cream)
- 30 g Shredded parmesan
In a large pan, add the oil and set it to medium-high heat. Grill the chicken breast for 5 minutes each side (it can be more or less depending on how thick is the slice). Set them aside.
On the same pan add the garlic, sun-dried tomatoes and baby spinach. Cook it for 1-2 minutes.
Add the cooking cream and parmesan. Cook for another minute.
Finally, add the chicken back into the pan and cover it with the sauce. Let it simmer for about 2 minutes.
An easy and creamy dinner option. It goes well with white rice, potatoes or salad.
