Creamy Tuscan Chicken (so easy!)

I can’t get enough of this chicken recipe. It is so easy to make, but incredibly tasty. Tender, juicy chicken breasts are simmered in a rich, velvety sauce made with cooking cream, garlic, Parmesan cheese, and sun-dried tomatoes and spinach. The sauce perfectly coats the chicken, while the sun-dried tomatoes add a tangy depth, and the spinach provides a fresh, earthy balance. This one-pan meal is as convenient as it is delicious, making it ideal for weeknight dinners or special occasions. Serve it over pasta, rice, or mashed potatoes to soak up every bit of the luscious sauce.

Creamy Tuscan Chicken Ingredients

  • 2 Chicken breasts (halved) (Around 450g)
  • 1 Tablespoon Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Garlic powder
  • 2 Garlic cloves, minced
  • ⅓ cup Sun-dried tomatoes, chopped
  • 2 cups Baby spinach (fresh)
  • 250 ml Low-fat cooking cream (you can also use heavy cream)
  • 30 g Shredded Parmesan

How to Make the best Creamy Tuscan Chicken

  1. In a large pan, add the oil and set it to medium-high heat. Grill the chicken breast for 5 minutes each side (it can be more or less depending on how thick is the slice). Set them aside.
  2. A pan with four halved chicken breast being grilled.
  3. On the same pan add the garlic, sun-dried tomatoes and baby spinach. Cook it for 1-2 minutes.
  4. A pan with minced garlic, chopped dried-tomatoes and baby spinach.
  5. Add the cooking cream and Parmesan. Cook for another minute.
  6. Adding Parmesan and cooking cream to the pan that has garlic, sun-dried tomatoes and baby spinach
  7. Finally, add the chicken back into the pan and cover it with the sauce. Let it simmer for about 2 minutes.
  8. An easy and creamy dinner option. It goes well with white rice, potatoes or salad.

Recipe Tips

  1. Season both sides of chicken breast with salt, black pepper before grilling it.
  2. You can switch the oil for the sun-dried tomatoes oil, for some extra-flavor
  3. Careful to not overcook the chicken breast, it will get to dry. If you have a food thermometer, to check if the chicken is fully cooked the internal temperature should be 165°F (74˚C).
