Start by mixing all sauce ingredients well in a bowl. Reserve
In a medium-high heat pan, add one tablespoon of oil. Start by frying the tofu. Once all sides are brown, remove it from the pan. Be gentle when mixing, so the tofu doesn't break. It will take around 5minutes.
Remove from the pan and reserve.
Add the other tablespoon of oil and stir fry the onions for 1 minute. Add the chopped dried chile and stir fry for another minute (optional).
Add the vegetables and stir fry it for another 3 minutes.
Put the tofu back into the pan.
Add the sauce and mix it well, but gently, so the tofu doesn't break. Cook until the sauce boils and thickens. It will only be about 2 minutes.
Add the green onions and cook for another 30 seconds.
Serve it on top of white rice.
