- 1 Onion, cubed
- 1 Carrot, sliced
- ½ Zucchini, cubed
- ½ Paprika, cubed
- ½ Sweet Potatoes, cubed
- ½ Eggplant, cubed
- 1 Tablespoon Olive oil
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 1 teaspoon Dried herbs such as rosemary, basil, oregano
Start pre-heating the oven at 390°F (200°C)
Chop all vegetables.
Add them to a large bowl and mix with the seasonings.
Distribute them well on a baking tray and bake them for 30 minutes at 390°F (200°C). After 15 minutes, make sure to open the oven and stir the vegetables.
