Ingredients

  • 1 Onion, cubed
  • 1 Carrot, sliced
  • ½ Zucchini, cubed
  • ½ Paprika, cubed
  • ½ Sweet Potatoes, cubed
  • ½ Eggplant, cubed
  • 1 Tablespoon Olive oil
  • ½ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 1 teaspoon Dried herbs such as rosemary, basil, oregano

Instructions

  • Start pre-heating the oven at 390°F (200°C)
  • Chop all vegetables.
    Chopped vegetables displayed on a plate: carrots, sweet potatoes, eggplant, zucchini, bell pepper and onions
  • Add them to a large bowl and mix with the seasonings.

  • Distribute them well on a baking tray and bake them for 30 minutes at 390°F (200°C). After 15 minutes, make sure to open the oven and stir the vegetables.
