Season the chicken with salt and pepper.
In a deep wok or a pot, add the oil and the chicken with the skin down at first. Cook it on high heat for about 5 min, or until the skin is crispy.
Turn the chicken and cook it for another 3 minutes.
Remove the chicken from the wok and reserve.
In the same wok, add the onion and red bell pepper. Cook it on high heat for 2 minutes. Add the garlic and cook it for another minute.
Add the rice (wash it under water before), white wine and all the spices. Mix it everything very well and cook it on high heat for about 1-2 minutes.
Add the boiling water and reduce the heat to low. Mix it well one time and leave the rice cooking (with the lid on) for about 15-20 minutes. Do not stir it while the rice is cooking, otherwise you will have gooey rice.
When the rice is almost cooked add the spinach and put the lid on again for another 3 minutes.
Mix the rice, add the chicken on top of the rice and serve it.
