One-pot Chicken Rice

Ingredients

  • 1 Tablespoon Oil
  • 4-5 Boneless Chicken Thighs (with skin on)
  • 1 Onion, chopped
  • 1 Red bell pepper, chopped
  • 2 Garlic cloves, minced
  • 2 cups White rice
  • 4 cups Water (Boiling)
  • cup White wine Optional
  • 1 teaspoon Tomato paste
  • 2 teaspoon Chicken bouillon
  • 1 teaspoon Paprika
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 cups Baby spinach
  • ½ teaspoon Turmeric Optional
  • Spicy sauce to taste Optional

Instructions

  • Season the chicken with salt and pepper.
  • In a deep wok or a pot, add the oil and the chicken with the skin down at first. Cook it on high heat for about 5 min, or until the skin is crispy.
  • Turn the chicken and cook it for another 3 minutes.
  • Remove the chicken from the wok and reserve.
  • In the same wok, add the onion and red bell pepper. Cook it on high heat for 2 minutes. Add the garlic and cook it for another minute.
  • Add the rice (wash it under water before), white wine and all the spices. Mix it everything very well and cook it on high heat for about 1-2 minutes.
  • Add the boiling water and reduce the heat to low. Mix it well one time and leave the rice cooking (with the lid on) for about 15-20 minutes. Do not stir it while the rice is cooking, otherwise you will have gooey rice.
  • When the rice is almost cooked add the spinach and put the lid on again for another 3 minutes.
  • Mix the rice, add the chicken on top of the rice and serve it.
