Start by seasoning the chicken with salt and pepper to taste. Then completely coat the chicken with a thin layer of cornstarch.
Add the oil to a medium-high heat pan. Once the oil is hot, place the chicken with the skin down. Hold the chicken down with a spoon for 20 seconds. Continue pan-frying the chicken for about 4 minutes.
Turn the chicken and pan-fry it on the other side for about 3 minutes.
Remove the chicken from the pan and reserve.
Mix all the ingredients for the sauce into a bowl, and mix it well.
In the same pan, on medium-high heat, add the sauce and bring it to a boil. Only for about 15 seconds.
Add the chicken back to the pan and make sure to spread the sauce well. Cook it on each side for about 30 seconds on medium-high heat.
Served it on top of rice and vegetables. You can also garnish with chopped green onions.
