Spaghetti with Crispy Bacon and Chickpeas

Ingredients

  • 250 g Spaghetti
  • 2 Tomatoes, chopped
  • 2 Garlic cloves, minced
  • 80 g Bacon strips, chopped
  • 3 Tablespoons Cooked chickpeas
  • 1 Tablespoon Extra-virgin olive oil
  • 1 Dried chili, chopped (optional)
  • ½ teaspoon Salt
  • ¼ teaspoon black pepper
  • Parmesan cheese and fresh parsley to garnish

Instructions

  • In a pot, add water and one teaspoon of salt. Mix it. Once it is boiling, add the spaghetti and cook according to package instructions.
  • While the water is cooking, in a large pan on medium-high heat, add the olive oil and the bacon. Cook it until the bacon is crispy. Remove the bacon from the pan and reserve.
  • Add the dried chili to the pan, cook it for a minute (optional, if you don't like spicy food, skip this step).
  • Add the tomato and garlic. Cook it for about 3 minutes.
  • Add the chickpeas, salt and black pepper. Mix it well.
  • Once the past is cooked, drain the pasta and add the pasta to the pan. Mix it well with the sauce for about 1 minute.
  • Garnish with the bacon, fresh parsley and parmesan cheese. Serve it together with a green salad.
