Shepherds Pie Cauliflower Ingredients
For the Mashed Cauliflower Topping
- 1 head Cauliflower (around 500g)
- 100 g Cream cheese
- ½ teaspoon Salt
- ½ teaspoon Black pepper
- ½ teaspoon Nutmeg
- 80 g Shredded cheese
For the Meat Filling
- 1 Tablespoon Oil
- 250 g Minced meat
- ¼ Onion, diced
- ¼ cup Leek (around 30g)
- 2 Garlic cloves, minced
- 2 Tomatoes, chopped
- 1 Tablespoon White flour
- 1 cup Boiling water
- 2 teaspoons Beef bouillon
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon Sugar
- 150 g Frozen spinach
- ½ teaspoon Salt
- ½ teaspoon Black pepper
How to Make Shepherds Pie Cauliflower
Preparing the Mashed Cauliflower Topping
- Wash and cut the cauliflower. In a pot, add some boiling water. Place the steamer and add the cauliflower on top of it. Close the lid and cook it on low heat for about 5-7 minutes. Alternatively, you can also boil the cauliflower in boiling water in low heat for about 5 minutes.
- Blend the cooked cauliflower in a blender. Add it to a bowl. Add the cream cheese, salt, black pepper and nutmeg. Mix it well.
- The cauliflower-mash is ready.
For the Meat Filling
- In a pot on medium-high heat, add the oil, onion and leek. Stir fry it for about 2 minutes.
- Add the minced meat and stir fry it for about 5 minutes, until the beef is cooked.
- Add the chopped tomatoes and garlic. Stir fry it for about 3 minutes.
- Add the flour and mix it well.
- Add the boiling water, spinach, sugar, beef bouillon and Worcestershire sauce.
- Let it simmer for about 10 minutes in medium-low heat. Add salt and black pepper. Adjust as per your taste. The meat filling is ready.
Assembling the Shepherds Pie Cauliflower
- In a baking tray, add all the meat filling at the bottom.
- On top, add the cauliflower topping.
- Finish with a bit of shredded cheese on top.
- Add it to a pre-heated oven on 350°F (180°C) for 20 minutes. Your Shepherds Pie Cauliflower is ready. Serve it immediately with a side of green salad.
Recipe Tips
- You can also add more vegetables in the meat filling. At the original recipe I add tomato, onions, leek and spinach. Other great options would be carrots, peas and even mushrooms. Add more vegetables for an even more nutritious meal.
- If the filling is too runny, add a bit more of white flour. This ensures a firm pie that holds together well when serving. Another tip would be to let the pie rest for 15 minutes before serving, to let the layers set and make it easier to serve.
